SpamAssassin ‘scans’ the header and the body of every email, calculates a spam score and then continues according to the level that you have opted for. Each mailbox can have a different level and you can choose whether the messages that the anti-spam filter flags as spam should be erased or redirected to a separate email account where you can review them at a later point in time, so as to avoid deleting a genuine email. Switching to some other level or deactivating the anti-spam protection is also pretty easy.
